Ingredients:
  P! ~; r) h; C* Q1/2 Chicken Breast Fillets,200g (1/2 边鸡胸肉)
5 U1 C3 q% P( C1 Teaspoon Light Soy Sauce (1 小匙酱油) , ]4 \( d' f8 k& V/ M
1/2 Tablespoon Cooking Wine (1/2 汤匙花雕酒) 6 n* C4 {, a' O/ g! f5 ^
1 Teaspoon Cornstarch(1 小匙玉米粉)
0 g; B5 }% ]/ ^Some Pepper(少许胡椒粉)
, L/ Y) s1 V" L5 r- R2 Tablespoon Sweet Potato Flour (2 汤匙地瓜粉)
# A9 _7 G& x# B6 m9 U4 i: N1 Tablespoon Cornstarch (1 汤匙玉米粉) $ }2 m2 G# j) K5 ^1 W- Q1 s) v

Methods:
) X2 c: S+ D4 i8 ^& e2 z; M, RWash and cut chicken fillet into 2cm wide strips then marinate with Soy Sauce, Cooking Wine, Cornfstarch and Pepper for at least 30 minutes or more.
! K' o/ Y% C6 Q0 v5 |# Z' Y将鸡胸肉洗净, 切2cm 宽条状, 然后加入酱油, 花雕酒, 玉米粉和胡椒粉调味至少30 分钟以上.
$ w) g. v: G5 H3 c4 G( ACoat the marinated chicken with the flour mixture(sweet potato flour + cornstarch) and set aside for 5 minutes before deep-frying.
2 `" d; ?0 T8 i6 T$ c将腌好的鸡肉条沾混合好的地瓜粉和玉米粉, 然后放在一边等5分钟后才炸.( 这能防止粉从鸡肉上滑落)
/ c4 m8 X: h% ZHeat up half pot of oil and deep-fry the chicken strips in two batches until golden brown, drain and set side. 7 t/ _# `. F; J, Y) Q4 D& q
热半锅油, 把鸡肉条分成俩次炸成金黄色后, 捞起放在吸油纸上吸干油分.

Chilli Sauce: & B$ e. o4 X) v: ], K
2 Cloves Garlic, grated (2 颗蒜, 切末) ; D  I. @5 Q6 t. Y0 R7 m
2 Small chilli, finely chopped (2 颗小辣椒, 切末) 5 }1 L( y3 U6 ]9 T6 Z3 o) N  Z
8 Thai Basil Leaves, finely chopped (8 叶九层塔, 切末) ; H' O* K* L0 W
1 Teaspoon Chopped Spring Onion(1 小匙葱花) 5 q5 }6 U  j: r/ h; j
2 Tablespoons Thai Sweet Chilli Sauce (2 汤匙泰式甜辣椒酱)
% c- l  f, A# X$ H  G1.5 Tablespoon Lemon Juice (1.5 汤匙柠檬汁)
* y- v, y1 Y) w1 Tablespoon Thai Fish Sauce (1 汤匙鱼露) & \% a' V: v- i: m/ y3 k# z
1/2 Teaspoon Sugar (1 /2 小匙糖)
( I7 a7 `) [  u; @6 H1 Tablespoon Drinking Water (1 汤匙食水) " u) T4 g4 @6 Q7 N' I

Methods:
' J, w- _* t1 U9 b# [Mix all the sauce ingredients together in a small bowl and set aside for later used.
1 x6 p, i; h* C把全部酱料的材料放在一个小碗里搅拌均匀, 待用.( 如果您不会吃太辣, 就不要放小辣椒或只放一颗)

+ P9 `% j4 ~  x0 V$ [0 vSalad Base: (optional) ! J8 M+ |1 B% b3 k# ]$ r
1 Red Apple, shredded (1 个萍果, 切丝) 7 k" B" Y$ \' A8 ~$ I7 S2 d
1 Japanese Cucumber, shredded (1 条日本小黄瓜, 切丝)
8 Z1 \: u9 s" t+ Q5 F7 A* q& @( j1 Small Carrot, shredded (1条小胡萝卜, 切丝) 9 l( Z: \* v7 S, O2 }
6 Cherry Tomato, halves (6颗小番茄, 切半) ! F* o4 K$ g; }6 L! {% n
6 Lychee, remove seeds (6颗荔枝, 拨壳, 去种子)

Mix all the above ingredients in a mixing bowl then set aside in the fridge until serve. & r+ Z: Y( `# d0 K( V% [
把全部的沙拉材料放在一个碗里搅拌均匀, 放进冰箱待用.
0 n4 J6 D" }9 S( X, b  QYou can used any other fruits or vegetables that you prefer or in season. * s2 h; l. O+ r9 n
你也可以用其他的水果蔬菜来代替. 0 S% s" D, [6 Z' q

Assemble:
) m+ V* u1 \3 W& V$ q+ A% `( i' P6 uPlace salad mixture on a serving plate, top with half of the fried chicken strips then drizzle some chilli sauce over the chicken and salad.
# v% `4 p5 f3 y3 n& t1 C首先把拌均匀的冷沙拉扑在大盘上, 然后放一般的炸鸡肉条, 接着均匀的淋上些辣椒酱.
$ p1 }. D# C; z: e8 n( B5 K! `Continue topping the rest of the chicken and drizzle the rest of the sauce around it.
" Z, P' N  i1 H: E" L之后继续放上剩余的鸡肉条, 再淋上些辣椒酱.

8 }- `8 V* a6 O0 }You might not need all the sauce, so add the amount that you prefer. Or you can serve it as dipping sauce for the chicken strips without the salad.
