中秋快到自己动手《冰皮月饼》超赞[68P]
中秋快到了,当然中秋吃得最多的就是冰皮啦~买现成的很贵,自己做,成本就低很多很多~自己也跃跃欲试,

于是买了材料和模具就动手做。

用了两种方法来做,三种口味,发现用澄粉的那种方法,gL;j} P

口感是比较好,而且很柔软,很滑很细腻,绿豆馅和奶黄馅

炼奶60ml 牛奶540g 鸡蛋90g(三个左右)

2、炼奶、牛奶拌匀

3、把粉类和砂糖混合,然后把蛋分三次加入

5、把(4)入锅大火蒸15-20分钟至熟

去壳绿豆200g 砂糖100g 色拉油90ml

1、绿豆洗净,加适量水入锅煮透

2、把煮透的绿豆用搅拌机搅成绿豆泥!m&Ae)kM:E.Q$c
3、把绿豆泥倒入锅中分次加入砂糖,分次加入色拉油,小火炒干即可?M

2、牛奶加炼奶拌匀,倒入粉中搅拌均匀

2、所有粉类混合,加入(1)搅拌均匀

1、冰皮冷却后,把冰皮分成25克的小挤子压扁(这个克数是用果冻模的,如果

用月饼模一个小挤子大概30克左右),放入馅料,包紧、收口、搓圆,在手上拍

2、在模具里撒一点糕粉,让糕粉均匀粘在模上壁上,以方便脱模,然后把包好的

冰皮面团放进模具用手掌压实
