将鲤鱼去鳞、挖腮、剖腹、去内脏、抽筋后清洗干净,拭干水分,用刀在鱼身两面等距离各划五、六刀。用料酒、盐、一半酱油抹遍鲤鱼全身,腌约十分钟;姜、蒜剁末;香葱一半切碎,一半切细丝;泡红辣椒去籽后切丝;将另一半酱油、糖、醋、一半淀粉同放在装汤或水的碗里调成滋汁
